One of the Greatest Calzones I have Ever Made at Home.

I found a new recipe the other day for a BBQ chicken Calzone and I decided it would be perfect for my poker game and would probably be good for your game as well.

I just found this recipe and decided to try it out last night, so I invited over some friends, who just happened to be my poker buddies, not only did we all love this, but we managed to get in a few hands of poker which is always a good time.

The BBQ chicken Calzones really was the star of the game, and I will definitely be putting this one in my top 20 recipes, not just for poker games. I am going to make this next week for my nephews Birthday.

This recipe is a bit messier and more involved then I usually like to make, but it just looked so good I could not pass it up.

I recommend putting out plenty of napkins and you may even want to take a 20 minute break from the poker game, so the table and the cards don't get all covered in the BBQ sauce.

INGREDIENTS
3 cups shredded, cooked chicken breast meat
1/2 small onion, chopped
2/3 cup barbeque sauce
4 slices bacon
2 tablespoons chopped fresh cilantro
1 cup shredded mozzarella cheese
1 (10 ounce) can refrigerated pizza crust dough

DIRECTIONS
  1. Preheat the oven to 400 degrees F (200 degrees C).
  2. Fry bacon in a large skillet over medium-high heat until crisp. Remove from the pan to drain on paper towels; crumble.
  3. Add the onion and shredded chicken to the hot bacon grease in the pan. Fry over medium heat until onion is tender.
  4. Stir in 1/3 cup of barbeque sauce, and remove from the heat.
  5. Mix in the cooked bacon.
  6. Roll the pizza crust dough out onto a greased cookie sheet. Press out to an even thickness, and then cut in half.
  7. Divide the chicken mixture between the two pieces of dough, spreading on only half of each piece to within 1/2 inch of the edge.
  8. Drizzle the remaining sauce over the filling. Sprinkle the cheese and cilantro over the top. Fold the uncovered portion of dough over the filling, and press the edges together with a fork to seal.
  9. Bake for 25 minutes in the preheated oven, or until browned to your liking.
  10. Cool for a few minutes, then cut each calzone in half. Each serving is half of a calzone.

These can be served with additional barbeque sauce if you like.
